I had hanger steak at Jose Malones a month and a half ago, and I still can't get it out of my head. It was prepared with this amazing chili rub, and served with yummy buttery potatoes and asparagus, and salad...mmmm!!!!
So yesterday driving back from Goshen, I stopped at Guido's in Great Barrington, MA. They had lots of fresh fruits and veggies (yum! gorgeous cherries!), and I wanted some steak to cook this week while Mark's gone for a week of MORI secretary trainings in N. Carolina. They had hanger!! I got a pound and a half and intend to broil it and make burritos a la this recipe, though this recipe also looks good! Recent weeks have found me eating REAL LUNCHES - often some rice and a can of beans pan fried with chili and cayenne, mixed with fresh onion. I will cook chicken, turkey, or beef up with spices and chop it up. All of this can be refrigerated nicely in pyrex containers, reheating single servings and placing these ingredients in a warm whole wheat tortilla with lettuce, avocado and salsa. This is so much better than being hungry or having a small lunch, or getting a sandwich! And it involves only one day of COOKING while Ezra naps.
Today I made ground turkey with taco seasoning and chopped veggies for a taco bowl with Garden of Eatin' Red Hot Spicy Blues chips instead of taco shells. Mmmm. I've got plenty of leftover turkey for more of that this week, and I now have recipes for the hanger, so I can cook that up at some point in the next couple days.
