At the same time, I got on the orbital, went roller skating, and then headed to Goshen to spend the weekend with my dad, Rod, and my stepmother, Libby. I had a really fun weekend, and my body feels really good from all the exercise and activity!
I arrived in Goshen around 2pm and dad and I headed out for a hike in Salisbury, CT. I haven't been out that way in years. In fact, I remember going for a hike up Bear Mountain in 2001. We took a slightly different route Friday...some photos of our adventure will be coming soon!
After three and a half hours of walking, breathing, talking and relaxing, dad and I stepped out of the woods and walked back to the car. I really enjoyed spending this time with my dad. We haven't had an afternoon out just us in a long, long time.
When we arrived home, Libby had dinner waiting (some yummy take-out from a gourmet health food store), and we sat down to drink lots and lots of water and watch the new Pink Panther with Steve Martin. It was my second time watching the movie...and I laughed and laughed and laughed...
The next morning I woke up early and dad and I headed out in his restored MG-TD convertible. Oooooh. Fun! We went to yoga (Boy I'm going to be sore after an hour and a half of Jan Troy's wild and crazy yoga. She is good though!) ... and then we went to Goshen's yearly Blueberry Festival.
My big project for the weekend was pickling. I'd mentioned how much I loved dilly beans, and dad dropped a hint that I could come pickle green beans and cukes anytime. I used the Joy of Cooking for recipes and directions on pickling (it really was my first time canning). I love the Joy of Cooking! So after a few hours of working in the kitchen, I had TWELVE piping-hot jars on the counter (three dilly beans, nine dill pickles). I had to leave for Troy before they'd cooled for half a day, but that evening I received a call from dad saying that all of them had sealed. Wahoo!! I can't wait to taste them in a few weeks!
So while Mark was off on his adventure, I had some great ones of my own. And then I came home to work a 12 on Sunday.
